At The Hat Rooftop we’re fascinated by kitchens that don’t follow straight paths. The ones that mix cultures, techniques and flavours without fear of breaking the rules. And few proposals embody that approach better than Tripea.

That’s why on Tuesday, June 30th, Roberto Martínez will close “Two Many Chefs: The Hat Rooftop Dinner Sessions” with a dinner created to surprise, to share and to enjoy without too many explanations. Just let yourself go.

The menu begins with a green papaya and mango salad with fried pig’s ear, followed by a “carretillero” tuna ceviche served on cevichada gazpachuelo, with squid chicharrón, roasted sweet potato and anticucho oil.

Next come jumbo prawns in stir-fried ceviche with rocoto and piquillo leche de tigre, and an Ibérico pork wonton with peanut cream and chipotle and sesame salsa macha.

As a main course, a slow-cooked beef cheek smoked over bay leaf with tom yum, roasted celeriac, pear hoisin and Chinese five-spice, in one of those dishes that combine intensity, depth and pure comfort.

To finish, a dessert as unexpected as it is addictive: rice with coconut milk, chicha morada, candied kumquat, lotus biscuit, crispy rice and beetroot powder.

A dinner for those who enjoy discovering impossible combinations, flavours that travel from one continent to another and dishes that turn every course into gastronomic magic.
